Holiday Cheer - Shrimp Sandwiches

Shrimp Sandwiches

Ingredients


1 8-oz cans shrimp pieces
or ½ pound fresh boiled shrimp
8-oz package Swiss cheese, shredded
1 medium onion, minced
Salt and black pepper to taste
Mayonnaise to blend
26 pieces of bread

Directions

Chop shrimp, Swiss cheese and onion. Add seasonings and mix well. Add mayonnaise to spreading consistency. Spread on bread to make sandwiches. May also be spread on crackers and dusted with paprika.

The recipe sounds great, but being from New Orleans I'd be shot if I used canned shrimp. LOL

Hmmm. Well, I don't eat shrimp, but I know lots of people who do. So, this would make a nice addition to a holiday open house.

Yum! I can't say I'll try this for New Year's...it's awfully close for me to think about a new recipe, but it looks delicious and I will definitely try it soon!

Oh, CJ, I don't use canned shrimp either...Shoot, I should have caught that. I use a pound of fresh shrimp that I boil in salt. You could also add shrimp boil to this and make it spicy, that would be good.

Judy, did we talk already? Where near Baton Rouge? I used to live in Gonzales. My daughter still does....did we meet a few years back at the Baton Rouge Chapter? I've been to a couple of their things....the first reader's luncheon and when John Foxjohn gave a talk...also I won first place in your contest a few years back.

oops, it does say you can use a 1/2 pound of fresh shrimp. I do use a pound, because I double the recipe....

I've made the canned shrimp with mayo before..love it! but never added cheese..and everything's better with cheese :)

Another lovely recipe, Anna. Can't use it for New Year's as I had Christmas Eve this year instead. But it sounds great for any party - and I adore shrimp. Thanks
