Holiday Cheer - Pecan Fingers

Here's another non-chocolate recipe that looks delicious.

Pecan Fingers

Crust Ingredients

½ cup margarine or butter
¼ cup shortening
¾ cup powered sugar
1 ½ cup flour

Filling Ingredients:

1 cup light or brown sugar
2 eggs
½ tsp baking powder
1 tbls flour
½ tsp vanilla
1 cup chopped pecans

Directions

Preheat oven 350°.

Crust: Blend margarine and shortening until creamy; add powdered sugar and mix well. Add flour, mix well. Press dough evenly in bottom of ungreased 9x13-in pan, half an inch up the sides. Bake 12 to 15 minutes or until light brown. Remove from oven.

Filling: In medium bowl, stir filling ingredients together very gently with fork until well mixed. Pour filling over hot crust, spread evenly. Bake 20 minutes. Cool and cut into bars.

Tomorrow's recipe: Chocolate Chip Pie (chocolate is back!)

The joy of brightening other lives, bearing each others' burdens, easing other's loads and supplanting empty hearts and lives with generous gifts becomes for us the magic of Christmas. ~W. C. Jones
