Holiday Cheer - Peanut Butter Fudge

Peanut Butter Fudge

Ingredients:

2 c sugar
½ c milk
1 ½ c peanut butter
1 jar (7 oz) marshmallow cream

Directions:

In a saucepan, bring sugar and milk to a boil. Boil for 3 minutes. Add peanut butter and marshmallow cream; mix well and fast. Quickly pour into a buttered pan (size depending on how thick you want fudge to be). Chill until set.

I am sure this is so delicious but alas, I can't have peanut butter. My hiatus hernia doesn't like it(bile comes back up). I know dh would love it because he eats peanut butter on toast.

Hi, L.C. thanks for stopping by. I haven't tried it yet, but am going to make it today, so may add a picture later.

Robyn! I just got diagnosed with a hiatal (sp) hernia. Honestly, I didn't realize I was having all the trouble the doctor found. At 50, I needed the basic GI tests. I was expecting a problem at the other end, but he found the herina and acid reflux, which I also didn't realize was bad. I'm on meds for it, but, as you say, I'm sure certain things will flair it up.

Thanks for this recipe! I'm planning to make a variety of fudge this Christmas. So far, I have set aside recipes for chocolate, vanilla and peppermint -- all made with marshmallow creme, so this recipe is now added to those.

Hi, LuAnn and Maeve. Thanks for stopping by. Don't double the milk! My husband suggested adding rice crispies. It has set up some, but not like it should. I'm not sure what the rice crispies will do, but I'll see about buying some and trying to add it.
