Easy Peanut Butter Pie

Here's another quick and easy recipe, this time for a dessert.

Peanut Butter Pie
Serves 8.

3 oz Cream Cheese, softened
1/2 cup smooth peanut butter
1 cup powdered sugar
1/2 cup milk
8 oz frozen whipped dairy topping, thawed
1 pre-baked graham cracker pie crust
(or use Keebler)

1. In a large bowl, with an electric mixer combine
cream cheese, peanut butter, sugar and milk. Beat until smooth.
Gently fold in whipped topping. Pour into pie shell.
2. Freeze 4 to 6 hours.
3. Thaw 10 minutes before serving.

Sounds yummy. I'm seriously going to have to try this.

One of the first things I baked as a kid was peanut butter cake with peanut butter frosting for my dad. It was his favorite.

Francesca, I've never made it. I came across it in my recipe file and it looked quick, easy and delicious, so I thought I'd share it.

I also can't make it anytime soon, as we have NO dairy products on any store shelves right now....and no frozen foods either. So, I can't buy the cream cheese or the cool whip until the stores are able to restock all the stuff they had to throw out due to power outages caused by Ike.

I went shopping today and it was eerie....no fresh vegetables or fruit, no milk, dip, eggs, yogurt, cheese, Pillsbury biscuits or cookie dough, no meat, nothing in any of the freezers. That's a LOT of food to throw out and that was one store....
