Holiday Cheer: Texas Ranger Baked Eggs

Today's recipe is a really great 'family gathering' brunch or Christmas morning dish.  Fix it the night before,pop it in the oven the next morning (while opening presents).  It also comes from this week's prize TEXAS MORNING GLORY: Memorable Breakfast Recipes from Lone Star Bed and Breakfast Inns. Just leave a comment on any and all blog posts through Tuesday, Dec. 13th.


Texas Ranger Baked Eggs
From Mariposa Ranch Bed and Breakfast
Brenham, TX

Ingredients

7 eggs
1 cup milk
2 tsp sugar
4 oz cream cheese, cut into small pieces
1 lb small-curd cottage cheese
2 cups Monterrey Jack cheese
¼ cup green bell pepper
2/3 cup butter, melted
½ cup flour
1 tsp baking powder
Dash paprika
Dash ground mustard

Directions

The night before: In a bowl, beat eggs, milk, and sugar together. Add remaining ingredients and mix well. Spray a three-quart baking dish with vegetable oil and pour mixture in. Cover and refrigerate overnight.

When ready to cook, preheat oven 350°. Bake for 50-60 minutes or until a knife comes out clean. Serves 12.

It sounds great, Anna Kathryn, but there are only two of us now. I might be able to cut it in half, but. . . LOL I'll save this one for another year when the kids are home.

Sounds delicious, Anna Kathryn. I'm considering it for our Christmas morning. I think I'll substitute canned minced green chilis for the bell pepper, though. Bell pepper and I are not friends. :)

This sounds delicious. I'm like Susan and there's only 2 of us. I might just cut it in half tho.

Yeah, even with a crowd, we have lots! It would be too much for just two people.

Caroline, I dislike bell peppers, too. I just leave them out of any recipe that calls for them.
