Holiday Cheer - Shrimp Sandwiches

I discovered this recipe a few years back when I needed to make some 'nice' sandwiches for a luncheon.  It's easy to do and, oh, so delicious. So, if you're having a luncheon this holiday season, give these a try.

Don't forget to leave a comment and your email to be eligible for this week's prize: ALL FOR LOVE: A Romantic Anthology by Laura Stoddard, quotes and drawings about the pangs and pleasures of love.

Shrimp Sandwiches

1 8-oz cans shrimp pieces
or ½ pound fresh boiled shrimp
8-oz package Swiss cheese, shredded
1 medium onion, minced
Salt and black pepper to taste
Mayonnaise to blend
26 pieces of bread

Chop shrimp, Swiss cheese and onion. Add seasonings and mix well. Add mayonnaise to spreading consistency. Chill for at least two hours. Spread on bread to make sandwiches. May also be spread on crackers and dusted with paprika.

Sorry, these you can keep. Not a fan of shrimp at all.
