CHOCOLATE CHIP COOKIE DOUGH TRUFFLES

OMG, my daughter made these a few nights ago.  The are out of this world.

Don't forget to leave a comment and our email to be eligible for this week's prize: ALL FOR LOVE: A Romantic Anthology by Laura Stoddard, quotes and drawings about the pangs and pleasures of love.

CHOCOLATE CHIP COOKIE DOUGH TRUFFLES

Ingredients:

2 ½ cups all-purpose flour
1 tsp salt
¼ tsp baking powder
1 cup (2 sticks) butter, room temperature
¾ cup granulated sugar
¾ cup packed brown sugar
1 tsp vanilla
1/3 cup milk (or soy milk)
1 cup mini semi-sweet chocolate chips

14 oz dark or milk chocolate candy coating

Directions:

Beat butter and sugars in large bowl until light and fluffy.  Add milk and vanilla. Stir in flour, baking soda and salt.  Mix on low speed until well blended. Stir in chocolate chips.

Cover dough and chill in refrigerator for 1 hour.

When dough is firm enough to handle, form dough into 1-inch balls and place on a baking sheet lined with waxed paper.  Place sheets in freezer and chill for 30 minutes.

Melt chocolate candy coating in microwave according to package directions.  Dip cookie balls into coating to cover, using a spoon to scoop them out. Place on the waxed paper-lined cookie sheets. Chill in the refrigerator to set. Store in refrigerator in airtight container for up to week…IF the last that long!

Makes 3-4 dozens
