Here's a really good, simply recipe....great to beat the summer heat:
1 bunch of broccoli, stalks discarded, heads chopped
1 med. onion, chopped
1 1/2 pounds bacon, cooked crisp
Dressing:
1 cup of Mayonnaise
1/2 cup sugar
2 Tablespoons vinegar
Mix dressing ahead of time (3 hours ahead or overnight), but don't pour it on the salad yet. Mix chopped broccoli, onion and bacon together. Within an hour of serving salad, pour dressing over it.
Do you have a good salad recipe? I'm been looking for a pea salad recipe for years. I love pea salad, but have never made it. I know, I could find one on the net, but if you have one to share, please do. And not just pea salad, any salad.

1 small package instant pistachio pudding mix
1 can crushed pineapple
1/2 cup of shredded coconut (optional)
1 cup miniature marshmallows
1/2 cup chopped pecans
1 (8 ounce) container frozen whipped topping, thawed
Maraschino cherries (optional)
DIRECTIONS
In a large bowl, mix together all ingredients, except whipped topping...then fold in whipped topping. Chill.

Olive's Salad
1 package Lime jello( partially set
1 cup hot water ( then add:
1/2 cup Mayonnaise
1 carrot ( thin strips, for color
1/2 cup Cottage Cheese (dry or creamed
1 teaspoon plus chopped onion
1 cup chopped celery
Mix the other ingredients with the partially set jello and put in fridge to set more.
Tuna Salad
2 cups raw Macaroni (cook till tender
1 tin solid light Tuna (drained
1 tin small Shrimp (drained
1 cup chopped celery
Peas, cooked
1/2 - 3/4 cup Miracle Whip
1/4 teaspoon pepper
1/2 teaspoon salt
Cook macaroni till tender; drain and wash with cold water.
Mix the remaining ingredients and add to the macaroni and stir.
