Cream of Mushroom Soup recipe

Let's post some recipes. I love sharing recipes and one of my favorites, though probably not really considered a 'summertime' one is Cream of Mushroom soup. I love this soup when I'm not feeling well....if I had some mushrooms, I'd probably make it for my mom, but alas, I have no fresh mushrooms.....

So here's the recipe and I hope some of you will share one of your favorites, too.

Cream of Mushroom Soup

8 oz sliced Fresh Mushrooms
½ tsp celery seed
4 cups chicken broth
¼ cup butter, divided
2 Tbsp butter
1/3 cup flour
1/8 cup minced onion
4 cups milk
1 tsp salt
¼ tsp pepper

In a medium sauce pan simmer mushrooms, 2 Tbsp butter, onion and celery seeds, covered for 5 minutes. Add chicken broth and simmer uncovered for 10 minutes. (It takes forever to bring this to a boil, so turn up heat and cover until it begins to boil, then uncover).

In a soup pot, melt 1/4 cup butter, add flour and stir with whisk until smooth. Add milk, salt and pepper. Cook, stirring with whisk until thickened. Add mushroom mixture, heat to boiling, but don’t boil.

Cream of Mushroom is one of my favorite soups. I've never had a homemade version before. I've always get my fix from Campbell's.

Ah, I like Campbells, too, the regular, non-lowfat, etc. Kind. This is not as creamy as theirs, but it's a very good soup. You should try it sometime.

OOOHHH!!! I don't cook...so I have no recipe to share...but yours sounds wonderful...and I love Mushroom Soup, especially when it is used in a tuna noodle casserole...like my mom used to make...

This sounds like a recipe that even I could make. Sometimes I have been known to burn water!
