Grandma Scott's Pumpkin Bread

Christina loves to bake at Christmas...it was a tradition started with her mom before her parent's unexpected death when she was a teenager. Her brother Jacob knows this and he's purchased all the items needed for a baking binge. Grandma Scott's Pumpkin Bread is one of the all time favorite goodies at Christmas for the Scott family (right after the homemade fudge, of course).

Besides, cooking will keep her mind off sexy Gavin, a man who stole her heart when she wasn't looking and now appears to want her on the far side of Montana, not in the house 'next door.'

Grandma Scott’s Pumpkin Bread

3 C sugar 1 C oil
4 eggs, beaten 2 C cooked pumpkin (1 16-oz can)
3 ½ C flour 1 tea baking powder
2 tea salt 2 tea baking soda
½ t ground cloves 1 tea ground cinnamon
1 tea ground nutmeg 1 tea ground allspice
¾ C water 1-1 ½ C chopped nuts

Mix sugar, oil and eggs until light and fluffy. Stir in pumpkin.
In another bowl, combine dry ingredients. Stir into pumpkin
mixture. Add water and nuts. Spoon batter into well greased and
floured pans (2-3 depending on size). Bake at 350ยบ for 60-70 minutes.

Note: if you use 1 pound pans, you'll get 6 loaves of bread....plenty for neighbors, school teachers and co-workers.

It's a really good recipe. We love it at my house and I'll make it throughout the year. I like that it makes at least 2 loaves, so you can give one away (or take to church for coffee hour) and still have one for you!

It is simple, though it seems to take a few minutes to mix it all together. I'm usually in the kitchen half an hour, I'd say mixing it together.
