Wednesday's Chow - Chessy Slow Cooker Chicken


My eldest daughter Tiffany, the mother of two children, ages 23 months and 4 years, also works full-time in child care center. So, she's a pretty busy wife and mother. She recently tried this recipe and posted it on her myspace blog. My younger daughter, Holly, (mother of a 16 month old, and also working outside the home) saw the post and suggested that I post it here. I haven't tried it, but if Tiffany likes it, I'm sure it's good.

I personally like crockpot recipes....dump the ingredients into the pot in the morning and then forget about it. Go about your daily business and come home to a already-cooked meal. One word of warning (learned from personal experience)....make sure the crockpot is PLUGGED IN before you leave the house....somehow, the food just doesn't cook if it's not and you have to make something else for dinner (not to mention throwing away a really nice looking pot roast).

Cheesy Slow Cooker Chicken (Crockpot Recipe)




Ingredients:


6 boneless, skinless chicken breasts (about 1 1/2 pounds)


Salt, black pepper and garlic powder to taste


2 cans (10 3/4 ounces each) condensed cream of chicken soup, undiluted


1 can (10 3/4 ounces) condensed Cheddar cheese soup, undiluted


Chopped fresh parsley (optional)


Hot cooked pasta (your choice, I like the rotini with it)



Directions:


1. Place 3 chicken breasts in Crockpot slow cooker. Sprinkle with salt, pepper and garlic powder. Repeat with remaining 3 chicken breasts and seasonings.



2. Combine soups in medium bowl; pour over chicken. Cover; cook on LOW for 6 to 8 hours or until chicken is tender.



3. Sprinkle with parsley, if desired. Serve over pasta.



** Yields 6 Servings**



Note: This sauce is also delicious over rice or mashed potatoes.

Anna,
Your recipe for Chessy Slow Cooker Chicken sounds good, I will have to try it. I almost had a slow cooker disaster. I was making pot roast also. I put everything in and left for work. When I got to work, I remembered that I didn't plug the slow cooker in. I spent 20 minutes trying to get a hold of my husband to plug it in. He was sleeping and didn't hear the phone at first. Luckly, I was able to wake him and save our dinner.

Becky....that's great. I didn't realize until I got home from work, some 12 hours later, that I hadn't plugged it in. So there was nothing to do but throw it out.

This one sounds delicious! I love slow-cooker recipes. And I can use the leftovers to make soup!

I wish I hadn't just come from the store. This would be great for dinner tonight!

This sounds really good. I made something like it last night only left out the cheddar cheese soup. It wasn't a crock pot but a skillet in the over. I don't have a crock pot but might have to get one as it would be nice to fix supper and forget it until it's time to eat. Now you've made me hungry.

I once made chicken and dumplings. When I mixed the dumplings I used powdered sugar instead of flower.

The recipe sounds wonderful, thanks to your daughters. Every time I think of this mishap I have to laugh because my husband took it so well.

I was working and getting home late so I made a very large pan of soup the day before and asked my husband if he would put two handfuls of dry pasta into the soup and let it simmer about a half hour before I got home. Well, I forgot the size of his hands and his lack of knowledge in the kitchen. He didn't think it looked like there was enough pasta, so he put in two more handfuls. When I walked into the kitchen he was hemming and hawing - then lifted the lid. The pasta was to the top of the pan. The next day it was solid and he had to cut the soup out in chunks.

Chris and Paisley, thanks for sharing your mishaps. I'm getting a sore tooth just thinking about the sugar dumplings. LOL about the pasta. Men don't realize it 'expands' when cooking.

Had another mishap a few days ago, that didn't exactly have to do with cooking. I put a paper plate in the microwave with a sandwich on it to warm up. I had a paper towel over the sandwich to keep it moist. Well, the plate was a birthday party plate and had metal in it for the decoration. Yeah, so I look at the microwave and the paper towel is on fire. It was the only causalty...even the sandwich survived with a few minor burns.

So, another word of warning, watch which kind of plates you put in the microwave!

I love my crock pot; it's handy as you state and only one pot(usually) to wash.
