Wednesday's Chow - Green Beans with Parmesan

Here's a fairly easy side dish.  I really like fresh green beans, but I do get tired of steaming them all the time, so I've been on the hunt for a variety of dishes.  I made this one the other day and it was great.  I've tweaked it from the original, becausee I really like fresh mushrooms, too.

Green Beans with Parmesan


¾-1 pound fresh green beans
¼ cup olive oil
1 medium onion, diced
4 oz mushrooms, sliced
1 clove garlic, diced
1 tsp dried basil
Salt and pepper to taste
1/3 grated Parmesan cheese


Preheat oven 350°. Cook green beans in salted water until tender-crisp. Meanwhile, heat oil and saut√© onions, mushrooms and garlic until onions are translucent and mushrooms are tender. Add green beans and basil. Salt and pepper to taste.

Pour into a 1-quart baking dish and sprinkle with Parmesan cheese. Bake 10 minutes or until cheese is melted and browned.

Oh, this sounds good! Maybe I can get my kids to eat them this way. LOL And great picture! Love it!! :)

Hi, Paige and Melissa. It's a good recipe. You can make it with canned beans, too, but I like the fresh stuff. I should have added that for those in a rush. Two cans of green beans and just add them to the rest of the stuff.
