Wednesday's Chow - Morning Glory Muffins

BRENDA NOVAK'S AUCTION IS OVER FOR 2013!  IT RAISED $335,000, PUSHING HER OVERALL FUND RAISING TO $2,000,000. Thanks to everyone who participated!

I found this little cookbook, TEXAS MORNING GLORY: Memorable Breakfast Recipes from Lone Star Bed and Breakfast Inns, a few years ago and just love it.  I make the Texas Ranger Baked Eggs all the time (find the recipe HERE).  I’ve included it in my Tex-Mex Cookbook Basket available through Friday, May 31st at the Brenda Novak Online Auction for Diabetes Research.

For your enjoyment, here’s a recipe from The Iron Horse Inn, Grandbury, TX.

MORNING GLORY MUFFINS

Ingredients:

2 cups flour
1 ¼ cups sugar
2 tsps baking soda
2 tsps cinnamon powder
½ tsp salt
2 cups grated carrot
½ cup raisins
½ cup pecans (or other nuts)
½ cup shredded coconut
1 apple, peeled, cored and grated
3 eggs
1 cup vegetable oil
2 tsps vanilla extract

Directions:

Preheat oven 350°F. In a bowl, mix flour, sugar, baking soda, cinnamon and salt.  Stir in grated carrot, raisins, nuts, coconut and apple.

In a separate bowl, beat eggs with oil and vanilla. Stir into flour mixture until, batter is just combined.

Spoon into well-greased muffin cups, filling to top.  Bake at 350°F for 20 minutes, or until toothpick inserted into the center doesn’t stick.  Makes 14 large muffins.

Wednesday's Chow - Raisin Bran Muffins

J. D. Faver treats us with a special recipe from her new cookbook. Thanks for filling for me on such short notice, June!

Hi Anna Kathryn. I'm delighted to be able to share a favorite recipe with your readers. It’s one of 56 recipes in my newly released cookbook, A Texan in the Kitchen: Autumn Recipes.

I worked as a Nutritionist for the Dairy Council for many years and this was one of the recipes I used to demonstrate. The flavor develops as the batter ages. Batter will keep in the refrigerator for up to six weeks.

10-ounce box of raisin bran cereal

5 cups flour (can use 2 cups whole wheat)

3 cups sugar

3 teaspoons baking soda

2 teaspoons salt

1 quart buttermilk

1 cup cooking oil

4 eggs, beaten

Mix dry ingredients in large bowl. Add liquids. Bake in muffin tins 15-20 minutes at 400 degrees.

Batter will keep in refrigerator for up to six weeks. Aging seems to improve the flavor.

My other news is that the third in my series of romantic thrillers, set close to the Mexican border has just been released. BAD VIBES is available on Amazon, as are the first two in the series. In Bad Vibes, Deputy Darla Calhoun arrests a vagrant, hanging around the marina, but after he’s cleaned up, she discovers a hunky, hard-body with a smoldering gaze hidden beneath the filthy rags. He turns out to be a federal agent working undercover. He’s after a gang of human traffickers using the Intracoastal Waterway to bring sex slaves into the United States from Mexico. Rafael assigns Darla as liaison officer to work with the feds, bringing her face-to-face with the “Iceman”, Mike Burke, the undercover agent she arrested. Darla, Mike and his partner tear up and down the Intracoastal Waterway in pursuit of the human traffickers, but when two local women disappear, the search becomes personal.

The order of the Series is:
4) Bad Dreams (under construction)

Holiday Cheer - Pumpkin Muffins

Today, I have a good friend sharing her recipe for Pumpkin Muffins (I'm keeping quiet about the 'gluten-free,' part....I want ya'll come check out the post at least...lol). Please welcome Skhye Moncrief, who is also sharing information about her HUGE DECEMBER PRIZE BASKET:

Thanks for having me swing by, Anna K. I'm a big tweaker of recipes. Probably because I am picky and/or don't mind chemistry in the kitchen. But before I reveal the muffin that will win you praise this holiday, I'd like to invite everyone to enter to win my huge prize...

1 box GOOD MEDICINE Native American herbal tea (in honor of the Native-American
hero of my novel FORBIDDEN ETERNITY)

2 vials cinnamon oil (flavoring guaranteed to spice up baked goods that's
reminiscent of a Time Guardian Ring Master, i.e. dragon's breath. Use with
caution.)

1 Voodoo Doll Little Wizard keychain (Little Wizard can help acheive a goal in
school or work. He can help dreams come true, but only for someone else. He can
not help his owner. HE OF THE FIERY SWORD's King Arthur could have used one!)

1 AN ENGLISH LADYMASS: MEDIEVAL CHANT AND POLYPHONY album by Anonymous 4 (for the medieval period feel)

1 SCOTTISH TEATIME RECIPES (To reproduce a bit of SWORDSONG ambiance; ISBN:
1-898935-18-9)

The wee-est scrimshaw sailing-ship pendant (For those Time-Guardian wannabes
like Twila Deeds in SACRIFICIAL HEARTS yearning for a journey through time and
across space...)

Join me at http://groups.yahoo.com/group/skhyemoncrief/ to enter. ;) Now to win you some attention at your holiday gatherings.

This is a recipe I found at Karina's Kitchen, http://glutenfreegoddess.blogspot.com/2007/11/pumpkin-berry-muffins.html. As always, I do things my way. Sometimes I think I should just shoot myself for being so hard-headed. But my thoughts paid off on this venture after I was informed I needed to ditch wheat products to attempt to heal my fibromyalgia. So, this is my modified version of Karina's recipe:

GLUTEN-FREE PUMPKIN MUFFINS

Mix in a bowl:
1 c. veg. oil
1 can pumpkin
1/2 c. molasses
1 1/2 c. brown sugar (don't pack it)
2 t. vanilla
1 t. nutmeg, allspice, cloves, ginger, and pumpkin pie spice
2 t. cinnamon
8-9 T. apple juice

Mix in another bowl:
1 c.. brown rice flour
1 c. cornstarch
1 c. soy flour
1 t. salt
5 t. baking powder
2 T. milled flaxseed

Slowly blend the dry stuff into the wet stuff.

Add 1/8th c. cornmeal + enough oats to equal one cup
1/2 c. dried cranberries.
1/2 cup walnuts

Spoon batter into muffin tins with liners. Batter should not quite reach the top of each liner. Bake at 350 degrees for 20-25 minutes until a toothpick comes out clean. Nobody will know you're feeding them a vegetable, Omega-3s, fiber, and fruit! Note, I always double the spices in any pumpkin recipe or add a few to get the flavor or our family friend's pumpkin bread baked in those large coffee cans... ;) ~Skhye
