Wednesday's Chow - Corn Casserole

With Memorial Day behind us, Summer is officially here, no matter what the calendar says! With summer comes picnics and pot lucks, bbq's and family dinners. So here's a quick and easy casserole dish to take along and share.

CORN CASSEROLE

2 cans creamed corn
1 can whole corn
1 cup sour cream
1 cup Jiffy corn mix
2 teaspoons sugar
1 stick butter, melted
1 ½ cups mozzarella cheese, shredded

Mix all ingredients together and pour into a 3-quart casserole dish. Bake at 350° for 45 minutes. Yields 6 to 8 servings.

I have a confession to make. I've never made this recipe and it didn't say what to do with the butter. I really doubt we're supposed just plop the whole stick of butter into the thing. I decided it should be melted.

But what do you think? Should the butter be melted or sliced into small pieces and mixed into the casserole?

I agree with you. I think that the butter should be melted too. I suppose if the butter is in small pieces and mixed into the casserole, it would work too.
This sounds really similar to a corn casserole that my mother-in-law made a couple of times and that I really like, but I don't know what was all used in it.

the corn casserole sounds delicious, going to have to try that one. I would probably just plop the pieces of the butter in there. It would depend on how much of a hurry I was in

it says butter melted or did you type that in there? I'd melt it.

Yum! I love corn. I would melt it like in the microwave first and then add it. Always safe side to melt it. I do it with alot of baking too. Let us know how it turns out!

Thanks for all the comments. Yep. Robyn, I put in 'melted' when I realized it didn't tell me what to do. To me the only alternative is to cut the stick of butter up into small squares and fold it in, let it melt as it cooks. That's a lot of trouble, so melting, as Caffey says, in the microwave first, is what I'd do.

I am going to make it, just don't know when.....
