Wednesday Chow - Stuffed French Toast

Just in time for Mother's Day - here's a quick but impressive breakfast recipe. Add bacon or sausage, eggs and orange juice and you have an elegant meal for mom. Don't forget the rose on the tray!


Stuffed French Toast

Shortening
8 slices of Bread
4 tablespoons of Soft Cream Cheese
8 teaspoons of Jam or Jelly
3 Eggs
2/3 cup Milk
½ teaspoon Vanilla
Powdered Sugar
Maple syrup

Grease griddle or electric skillet with shortening, then heat over medium heat or 375° for skillet.

Spread 1 tablespoon cream cheese and 2 teaspoons jam or jelly on each of 4 slices of the bread. Top each with another slice of bread.

Mix together in a large bowl eggs, milk and vanilla. Dip each sandwich on both sides into the egg mixture. Cook sandwiches on hot griddle until golden brown, about 3 minutes each side. Sprinkle with powdered sugar and cut in half. Serve with syrup, bacon and eggs for a hearty Mother's Day breakfast. Serves 4.

Loooooooooooove French toast! I recently had this cinnamon bun French toast that was to die for.

Here's the recipe:
1 cup pure maple syrup
5 tbsp butter, more if needed
2 tsp cinnamon
3 large egg
1 cup whipping cream, unwhipped (can use half and half cream in place of whipping cream or use 1/2 cup each)
2 1/4 tsp vanilla
4-5 slices egg bread (about 1-inch thick)
Confectioners sugar (optional)

In a saucepan bring the maple syrup, 1 tbsp butter and 1 tsp cinnamon to a boil; boil for 2 minutes.

In a bowl whisk eggs, whipping cream, vanilla, 3 tbsp maple syrup mixture and the remaining 1 tsp cinnamon. Place the bread slices in a large baking dish. Pour the egg mixture over bread slices; turn to coat. Pierce bread in several places with a fork; let stand for 5 minutes. Melt butter in a skillet over medium heat. Add bread and cook until brown (about 3 minutes). Add in more butter to skillet, and turn bread over; cook until brown (about 3 minutes). Transfer to plates and serve with more syrup of sprinkle with confectioners sugar.

recipe does sound great
The hubby and kids make creamed chipped turkey on toast with fruit and then in a vase they pick flowers from the yard that is how I have my breakfast on Mothers Day

We used to have a cold luncheon with cold cuts, pickles, homemade buns, Asini salad, cheese slices a nd a nicely decorated cake and beverages.

Yum!! Now I need to ask them to make it!! I love French Toast! And usually get it when we get to get out for B'fast and its been forever!

I do love omelets! Usually just with cheese but love all that goes with it at Denny's. LOL

I love waffles. But the syrup makes me a shaky mess. My favorite Mother's Day meal is breakfast. Because I hate to get up and mess up the kitchen. I love to go out for an omelette or ham and eggs, but I must have good coffee.
