Here's a warm recipe for those cold nights. Add some cheddar cheese and melt through if you want Broccoli Cheese soup.
Cream of Broccoli Soup
Ingredients:
1 lg onion, chopped
¼ cup butter
1 cup water
1 tsp salt
2 (10-oz) pkg frozen chopped broccoli
¼ cup parsley, chopped
1 cup evaporated milk
1 cup water
1 cup milk
Salt and pepper
Butter
Directions:
Sauté onion in butter, add water, 1 teaspoon salt and broccoli. Cook until tender. Add parsley.
Cool and puree in a blender. Place in a soup pot, add milks, and water. Season to taste with salt and pepper. Heat through. Do not boil.
Add a pat of butter in each bowl of soup.

Oh, Yummy. I love broccoli soup so have printed it out and want to try it next. Living in the mountains, we always like to snuggle in on a winter day with snow on the ground and have soup to warm our bellies.

I've been looking for a good cream of broccoli soup recipe and this one sounds delicious. Most of the ones I found called for cheese and I don't do that much cheese.

thanks for the recipe as I love Cream of Broccoli soup. I use cheese in my Cream of Cauliflower soup so should work in this.
