Wednesday's Chow - Cream of Broccoli Soup

Here's a warm recipe for those cold nights.  Add some cheddar cheese and melt through if you want Broccoli Cheese soup.

Cream of Broccoli Soup

1 lg onion, chopped
¼ cup butter
1 cup water
1 tsp salt
2 (10-oz) pkg frozen chopped broccoli
¼ cup parsley, chopped
1 cup evaporated milk
1 cup water
1 cup milk
Salt and pepper

Sauté onion in butter, add water, 1 teaspoon salt and broccoli. Cook until tender. Add parsley.

Cool and puree in a blender. Place in a soup pot, add milks, and water. Season to taste with salt and pepper. Heat through. Do not boil.

Add a pat of butter in each bowl of soup.

Oh, Yummy. I love broccoli soup so have printed it out and want to try it next. Living in the mountains, we always like to snuggle in on a winter day with snow on the ground and have soup to warm our bellies.

Thanks Anna Kathryn!

I've been looking for a good cream of broccoli soup recipe and this one sounds delicious. Most of the ones I found called for cheese and I don't do that much cheese.

Sounds yummy. I think I'd add a little cheese. My husband and i could live on soups in the winter and it doesn't really get that cold here in Texas.

Hi everyone. Thanks for stopping by.

Paisley, I don't make as much soup as I should.

Denise, it does sound good.

Linda, it's about to get cold here in Texas, even here in Houston, so line up those soups!

I've never used evaporated milk in my broccoli soup. That must be the secret! Thanks.
