Wednesday's Chow - Wacky Cake

What if I told you that you could make a delicious, moist chocolate cake without any eggs or milk? Would you say I was being a bit wacky? I promise there’s no magic involved. Except perhaps in how quickly it disappears. It’s no trick, but certainly a delicious treat. Although you’d be right in calling it ‘wacky.’

Though if you’re looking for a little magic be sure to check out my Faery Rosette entitled THAT MAGIC MOMENT with The Wild Rose Press. My heroine, Celeste is caught cookin’ in the kitchen, but it’s not a recipe for a cake she’s preparing.

What’s that smoke from? Could it be from the sparks flying between Celeste and Dane? Well, I don’t want to spoil it…you’ll have to read it to find out.

Wacky Cake

Sift:
2 teaspoon soda
1 teaspoon salt
6 tablespoons cocoa
3 cups flour
2 cups sugar

Mix:
10 tablespoons melted margarine/butter
2 teaspoons vinegar
2 teaspoons vanilla
2 cups cold water

*Mix all together and bake at 350 degree 45-55 minutes- sides will start to pull away from the pan when done and can check with a toothpick.

~Awesome with powdered sugar sprinkled over the top or your favorite icing.

My mom made this cake for us all the time growing up. It was an absolute favorite. She used to sift all the dry ingredients into the pan, make a "pool" in the center for the wet ingredients and then mixed it all up. It has a great tangy flavor that beats regular chocolate cake!

Maria- you're the first I've met that's heard of this recipe! I love this cake!
(but I do love chocolate- on my blog the other day I spoke of my husband's 'affair' with his motorcyle...mine could possibly be~ with chocolate! lol)

OOps, I don't think I posted the pan size. Now I'm going to admit how un-Betty I am by saying 'standard size cake pan' and actually went to measure one, lol.

Oh, I make Wacky Cake too. It was very easy and handy to make when I worked at the Personal Care Home. My Aunt gave the recipe many years ago. Starbucks would go great with some Wacky cake!!!

Will be interesting to find out what Celeste is cooking up in the kitchen.

I make this cake too. It's especially good with brown butter frosting. I use either two 8 or 9 inch round pans or the 7 or 8 by I think 11 or 13 inch pan for a single layer.
