Wednesday's Chow - Wacky Cake

What if I told you that you could make a delicious, moist chocolate cake without any eggs or milk? Would you say I was being a bit wacky? I promise there’s no magic involved. Except perhaps in how quickly it disappears. It’s no trick, but certainly a delicious treat. Although you’d be right in calling it ‘wacky.’

Though if you’re looking for a little magic be sure to check out my Faery Rosette entitled THAT MAGIC MOMENT with The Wild Rose Press. My heroine, Celeste is caught cookin’ in the kitchen, but it’s not a recipe for a cake she’s preparing.

What’s that smoke from? Could it be from the sparks flying between Celeste and Dane? Well, I don’t want to spoil it…you’ll have to read it to find out.

Nothing goes better with a good story than some chocolate. Enjoy one of my family’s favorite recipes for Wacky Cake.

Leave a comment and you could win a copy of THAT MAGIC MOMENT and $5 Starbucks gift card.

Maureen Bonatch
Faery Rosette- The Wild Rose Press

Wacky Cake

2 teaspoon soda
1 teaspoon salt
6 tablespoons cocoa
3 cups flour
2 cups sugar

10 tablespoons melted margarine/butter
2 teaspoons vinegar
2 teaspoons vanilla
2 cups cold water

*Mix all together and bake at 350 degree 45-55 minutes- sides will start to pull away from the pan when done and can check with a toothpick.

~Awesome with powdered sugar sprinkled over the top or your favorite icing.

Can love cross the boundaries mortals have erected to reject all that cannot be explained? As the last witch in the Turner line, Celeste doesn’t know if she’s finally found true love or if her grandma cast a love spell to continue the Turner line. Dane Johns is a man not easily forgotten, but that’s exactly what Celeste plans to do. Because he has one big flaw. He’s a mortal.
Dane Johns doesn’t know it but he’s under a spell, and Celeste Turner is the cure. Mysteriously healing his injury while captivating his heart, Dane is enchanted. Although once he discovers Celeste’s secret he must decide if he’s charmed enough to not only accept love into his life, but the world of magic.

Thanks for having me here! It's early but now I'm thinking about chocolate :) But it's never too early for chocolate.

Your cake sounds wacky AND delicious -- and I'm hoping it's low in calories:) It's going to make a great after-school snack today. THAT MAGIC MOMENT sounds equally appealing. Best of luck with it!

Oh it is delicious Judy! Calories? We'll just say they 'magically' fell out in the crumbs :)
Thanks for visiting.

My mom made this cake for us all the time growing up. It was an absolute favorite. She used to sift all the dry ingredients into the pan, make a "pool" in the center for the wet ingredients and then mixed it all up. It has a great tangy flavor that beats regular chocolate cake!

Sorry about the typo - I guess I was so excited about an easy chocolate recipe that I wasn't thinking straight. :)

Maureen said...

Phyllis - it definately IS easy. I'm no Betty Crocker and it's no problem for me :)

P.S. I didn't even notice the typo- had to go over it again to find it, lol

What size pan? Missed that?

Maureen said...

OOps, I don't think I posted the pan size. Now I'm going to admit how un-Betty I am by saying 'standard size cake pan' and actually went to measure one, lol.
Thanks for visiting and I hope everyone enjoys thier wacky cake- I know I always do! Plus it's a scratch cake that I think is almost impossible to mess up :)

Oh, I make Wacky Cake too. It was very easy and handy to make when I worked at the Personal Care Home. My Aunt gave the recipe many years ago. Starbucks would go great with some Wacky cake!!!

Will be interesting to find out what Celeste is cooking up in the kitchen.

I make this cake too. It's especially good with brown butter frosting. I use either two 8 or 9 inch round pans or the 7 or 8 by I think 11 or 13 inch pan for a single layer.
